Spicy Baked Potato with Broccoli and Vegan Queso- a nutritious and simple lunch or dinner.
This weekend was heavenly to say the least. The temperature got up to 67 degrees in Michigan. I’ll repeat that- 67 degrees in FEBRUARY people. Needless to say, I was outside the majority of the weekend. Saturday I walked downtown twice, went to my fave coffee shop, and met up with my sister Audrey to people-watch. It was incredibly interesting since my town was hosting a “Onesie Bar Crawl”. People were wearing their outrageously themed pajamas in public, so I’m sure you can imagine the hilariousness of the evening.
Anyway, since I didn’t want to waste any time indoors, that meant no time for elaborate meals. So Saturday night consisted of baked potatoes, a common weeknight meal for me. This is mostly because 1) potatoes are incredibly easy to cook and 2) you can dress them up in so many creative ways. For this recipe, I used my creamy Vegan Queso. I particularly love this queso because it’s made from cashews so it’s dairy-free and great to make ahead of time as a compliment to a number of different dishes.
For this Spicy Baked Potato recipe, all you need is a baked potato, broccolini (or regular broccoli), Vegan Queso and jalapeño hot sauce. That’s it. And if you want to get more creative, add some chives, or other veggies to the mix. You can even make the vegan queso ahead of time for an even easier last-minute meal.
