Spicy Vegan Baked Potato with Broccoli and Queso- a nutritious and simple lunch or dinner you can make in just 30 minutes.
One of my favorite easy dinners is the baked potato. I love to make them because 1) they are incredibly easy to cook and 2) you can dress them up in so many creative and nutritious ways.
For this recipe, I use my creamy Vegan Queso. I particularly love this queso because it’s made from cashews so it’s dairy-free and great to make ahead of time as a compliment to a number of different dishes.
How to make this Vegan Baked Potato with Queso:
For this Spicy Baked Potato recipe, all you need is a baked potato, broccolini (or regular broccoli), Vegan Queso and jalapeño hot sauce. That’s it.
First, you’ll need to cook the potatoes as desired. I personally like to make them in the Instant Pot. The process is really easy and it’s never failed me.
Next, steam the broccoli until just starting to get soft. Meanwhile, you can prepare the Vegan Queso.
And lastly, to prepare, cut a slit down the potato lengthwise and break away the potato skin to expose the flesh. Press with a fork. Add the broccoli and drizzle the vegan queso on top. Top with desired amount of jalapeño hot sauce (and Spanish paprika as seen in photo).
And if you want to get more creative, add some chives, or other veggies to the mix. You can even make the vegan queso ahead of time for an even easier last-minute meal.

Instructions
- Cook potatoes as desired (microwaving, oven, boiling, Instant Pot, etc.)
- Steam the broccoli until just starting to get soft.
- Prepare the Vegan Queso cheese.
- To prepare, cut a slit down the potato lengthwise and break away the potato skin to expose the flesh. Press with a fork. Add the broccoli and drizzle the vegan queso on top. Lastly top with desired amount of jalapeño hot sauce (and Spanish paprika as seen in photo).
