I’m feeling a bit spicy today. I’ve already said “this is war” and “I’ll cut you” to one of my best girlfriends via text. Ha! All in good nature of course, but for some reason I’m feeling energetic and just all around feisty. Maybe that’s what inspired this smoothie with a fiery kick. It’s also beautiful outside and good weather just instantly puts me in a good mood. My husband and I walked (and sometimes ran) 3 miles today and it felt great.

Lately I’ve been getting a little depressed because I gained a few pounds and I couldn’t figure out why. I mean, I eat vegan most of the time and I’m definitely very educated about nutrition- how could this be? I had to finally be real with myself and realize that even though I eat very healthy, I’ve been eating too much and far too many nuts, nut butters, and avocados. Also, bananas have 120 calories (who knew?!) and I mean, I’m not 21 anymore. So I decided to give this app a try- ‘My Fitness Pal’- and holy smokes am I glad I did. And apparently, I have a bunch of friends and family already using it “for years”. Why was I not informed of this? Why were they holding out on me?

Already, in 10 days, I’ve lost 5 pounds and I’m almost back to my normal weight. I just needed something to keep me accountable and this app is definitely it. If you haven’t checked it out, and you’re hoping to lose a few pounds (or more than a few pounds), I highly recommend it! Actually, as I type this- I realize it might be a good idea to write a post dedicated to the My Fitness Pal app. There we go- it’s on my list of to-do’s. Like the list wasn’t long enough already.

I’m always looking for unique smoothie recipes beyond the traditional strawberry-banana and chocolate/peanut butter (ok, let’s be real- that’s still my favorite). This rockin’ lime smoothie is made with fresh mango, cucumber, lime, and mint- and my favorite part-cayenne pepper! I know it’s a strange combination, but somehow it works! If you are sensitive to spicy food, I would recommend start with a little and add more as you go. As they say, you can always add more, but you can’t take it out if you add too much! My personal preference is 1/4 teaspoon of cayenne, but for this recipe I kept it at 1/8 teaspoon to start. Feel free to spice it up, if you desire.

I also love that it’s so easy. Just throw all the ingredients in the blender and blend to perfection. This recipe is for one serving so there’s no need to feel the pressure to share! 😉

Get your day started with a Mango-Cucumber Lime Smoothie- SO fresh and healthy- and with just the right amount of cayenne pepper to add a little KICK!

Ingredients

  • 1 cup fresh or frozen mango pieces (peeled and sliced, if using fresh)
  • 6 ice cubes
  • 1/2 cup baby spinach leaves
  • 2 mint leaves
  • 2 teaspoons lime juice
  • 1/2 small cucumber, peeled, seeded and chopped (about 1/2 cup)
  • 3/4 cup unsweetened coconut milk
  • 1/8 teaspoon cayenne pepper (or add a little more after tasting to make it spicier)

Instructions

  1. Add all ingredients to a blender and process until smooth. Enjoy! Serves 1.
