Tropical Kiwi Mango Lime Smoothie- your perfect refreshing dessert drink for summer.
Speaking of summer, it sure seems to be flying by; I can’t believe it’s already August. While I am excited to break out my fall clothes and boots, I’m sad to say that I haven’t been getting as much sun as I would like this summer. My weekends are usually dedicated to cooking and unfortunately I do not have an outdoor kitchen. I recently had some blood work done and my doctor told me that my Vitamin D levels are pretty low. The range is 25-80 and mine is 17! This was depressing for me as I know it’s due to the fact I’m not outside enough. Besides supplements, I think a vacation to a tropical destination is the cure.
And what do you know? We just booked our yearly trip to Hawaii for October! I’m looking forward to 7 days on Kauai and 4 days on Oahu over Halloween. Give me some sun. Does that mean I can send my insurance company the bill? =)
This Kiwi Mango Lime Smoothie would be the perfect drink for sitting poolside, and maybe add a little rum to make it extra special. Also, feel free to swap out the ice cream with low fat yogurt (dairy free) or almond milk for less calories and fat. Because of the coconut milk ice cream, this is more of a special treat or dessert.
To make this smoothie, add all of the ingredients to a blender and blend it up! Serve immediately. Makes 1 smoothie.
Kiwi Mango Lime SmoothiePin Rate
- 1 scoop vanilla coconut milk ice cream - about 1/4 cup
- 1 kiwi - peeled
- 1 cup fresh chopped mango - about 1 medium mango
- 1 teaspoon lime juice
- 1/2 cup almond or coconut milk
- 7-8 ice cubes
- Add all ingredients to a blender and process until combined. Serves 1.
