No-Bake Vegan Peanut Butter S’mores Cookies

When I was young my mom would make the classic American “no-bake cookies” and they were always one of my favorite desserts. And the best part- they were so easy to make that they were ready in just 15 minutes or so. As a kid, a fast dessert is a big deal. =) 

So I thought it would be great to make a vegan version of these iconic cookies. And as soon as I started putting ingredients together, I saw vegan marshmallows in my cupboard and “s’mores cookies!” popped into my head (note: that’s how a lot of my random recipes ideas come about).

So these S’mores cookies were born. They are very similar to the classic American no-bake cookie recipe, but with the addition of mini-marshmallows and graham crackers. Eating a couple of these certainly makes me feel like a kid again. Too bad I don’t have the same metabolism as I did back then! 😉

To make these cookies, first cover a baking pan with parchment paper. Then prepare a medium skillet over medium heat. Add the coconut oil, almond milk, coconut sugar, and cocoa powder and stir occasionally for a few minutes until boiling. Once it comes to a slow boil, let it boil for 1 minute. Then remove from heat.

Immediately add the peanut butter and marshmallows and stir to combine (note: the marshmallows will not melt completely). Next, add the graham crackers, sea salt and oats. Stir well to combine.

Using a spoon or cookie scooper (my preference), mold the cookies into little balls about 1 1/2 inches in width. Drop them onto the baking pan covered in parchment paper with space in between each cookie.

Add the baking sheet to the fridge for 30 minutes to 1 hour, or until cooled and firm. Store cookies in an airtight container for up to a week. Makes 14 cookies.

  • 1 tablespoon coconut oil, optional*
  • 3/4 cup unsweetened almond milk
  • 1/2 cup coconut sugar (or organic white sugar)
  • 2 tablespoons cocoa powder
  • 1/3 cup organic no-salt creamy peanut butter
  • 1/2 cup vegan mini marshmallows (I use Dandie’s)
  • 2/3 cup crushed vegan graham crackers
  • 1/4 teaspoon sea salt
  • 1 1/4 cup oats

Instructions

Notes

If you only have the large marshmallows, they can also work. Just cut them into bite size pieces before stirring into the sauce. I use about 6 whole marshmallows.

*You can make this without the coconut oil. They are a tiny bit more dry, but honestly it’s so close it may be hard to tell the difference. It may be worth saving the extra fat.  =)
