Crunchy Baked Onion Rings with Spicy Mayo

These amazingly healthy baked onion rings are extra crunchy and contain no eggs or dairy! Oh and super delicious!

My dad absolutely loves onion rings so whenever I have them, I think of him. I love them too, but I rarely order them as they are usually dipped in oil and fried. Secretly, I always hope someone at the table orders them so I can have one…okay, maybe two. I finally decided it was time to make homemade onion rings, but the healthy way. And I experimented with this recipe 4 times before I got it just right. I love how crunchy they are, and the fact that they are dairy and egg-free, even better.

First, you’ll want to soak the onions in almond milk and flax eggs in a shallow baking dish preferably overnight (or at least 4-6 hours). Use enough milk to almost cover the onions.

When ready to make the onion rings, preheat the oven to 450 degrees. In a large plate or shallow dish, mix the flour, breadcrumbs, panko breadcrumbs, italian seasoning, garlic powder, and salt.

Line a baking sheet with parchment paper. Then remove each onion ring from the milk and coat with the breadcrumb mix, pressing the onion down into the mix to cover completely.

Next, place each onion ring on the baking sheet. Spray the onion rings lightly with olive oil. Then, sprinkle with smoked paprika.

Bake for 15 minutes at 450 degrees. Remove from oven, turn onions over, spray lightly with olive oil and bake for about 10-15 minutes more, until crispy and brown on both sides. *Baking times may vary.

To make the Spicy Mayo, mix Vegannaise (or other non-dairy mayonnaise) with the Sriracha. Dip the onion rings in the spicy mayo or ketchup. These baked onion rings are a delicious alternative to the fried version, and no guilt!
