Stir Fry Zen Crunch Bowl

For this meatless Monday, I bring you an amazingly flavorful super crunchy Stir Fry Zen Bowl! I’m so proud of this recipe- it’s so healthy, vegan, gluten free and SOOOOO good!

I could eat this meal all day, every day- hot or cold. If you haven’t cooked with millet before, I encourage you to try it! It’s very similar to quinoa and I have a feeling that it’s going to become very popular in upcoming years. Millet may not be the most appetizing name, but quinoa wasn’t either (hell, I couldn’t even pronounce it), and look how well that caught on! If you don’t have any millet near you (it’s mostly found in urban areas), feel free to substitute with brown rice or quinoa.

So let’s get to the deliciousness! To start, cook your choice of millet, quinoa or brown rice and set aside. You’ll need about 2 cups cooked for this recipe (which was equal to 1 cup dried millet).

Add sesame oil to a wok or large pan over medium high heat. Add the broccoli and cook for 3 minutes, stirring occasionally. Then add the carrots, snow peas and vegetable stock. Stir and cook for 5 minutes. Add the greens and cook another 2 minutes or until greens are wilted. Remove from heat. Sprinkle with salt and pepper.

To make the dressing, combine miso, lemon juice, fresh ginger, tamari (if going gluten-free) or soy sauce, sea salt, rice vinegar, and agave syrup. Stir with a small whisk.

Finally in a bowl, scoop into different sections: millet, quinoa or brown rice, broccoli/snow pea mixture, red cabbage, chickpeas, and cashews. Drizzle with sauce and serve.

This stir fry will last a few days in the fridge, and makes an excellent work lunch or quick dinner. Eat it cold or hot; either way it’s so good.

Ingredients

  • 2 cups cooked millet, quinoa or brown rice
  • Crispy Asian Roasted Chickpeas (15-ounces)- see recipe here, optional but recommended
  • 1 tablespoon sesame oil
  • 1 crown broccoli, broken into florets (about 2 cups)
  • 1 1/2 cups shredded carrots
  • 1 cup snow peas
  • 1/2 cup vegetable stock
  • 2 cups asian greens (or kale and spinach)
  • salt and pepper, to taste
  • 1 1/2 cups red cabbage, chopped (about 1/4 of a cabbage head)
  • 1/3 cup roasted cashews

Dressing:

  • 1 tablespoons miso paste (yellow)
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh ginger
  • 2 tablespoons tamari or soy sauce
  • 1/8 teaspoon ground sea salt
  • 1 tablespoon rice vinegar
  • 2 teaspoons agave syrup (or honey)

    • I would try tahini instead. I often use it in dressings and it’s amazing 🙂 add warm water to thin.

    • I don’t cook them cause I like them extra crunchy =) but I’m sure you cook throw them in with the other veggies and cook. I hope you enjoy! =)
