1can sweet corn - rinsed and drained OR 2 fresh sweet corn from the cob (preferred)
1medium avocado - chopped into small pieces
1lime - cut into 4 wedges

Instructions
Cook the Instant Pot Chipotle Black Beans. Note: you can also use a can of beans, rinsed and drained. Cook with onions, garlic and spices if desired.
Meanwhile, in a medium pot, boil 2 cups water. Remove the pot from heat and add 1 cup bulgar, cumin, salt, chipotle powder and onion powder. Stir to combine, then cover and let sit for 20 minutes. Drain any excess liquid and fluff the bulgar with a fork. Add lime juice and stir.
To prepare for serving, in a bowl, add a large scoop or two of the bulgar, black beans, as well as a couple tablespoons of salsa, a sprinkle of lime juice and some diced cilantro. Add some cherry tomatoes, fresh sweet corn, and avocado. Additional toppings: vegan sour cream and crushed tortilla chips. Makes 4 bowls.
