When it comes to your food touching, are you one of those “mix it all together” types, or are you in the “my food cannot touch!!” club?

For me, I love mixing foods and the meshing of different flavors and textures together. So in the spirit of your food being {close} friends on your plate, bring on the meal-bowl!

This Mexican Black Bean Bulgar Bowl is one of my favorite go-to weeknight dinners. If you’ve never had bulgar, don’t be afraid of the name. It’s a super delicious grain, similar to rice or couscous and can be used in many dishes.

To make this bowl, you’ll need to make the Instant Pot Chipotle Black Beans first, if cooking beans from scratch. You can make them ahead of time and keep in the fridge until ready.

But if you don’t have time to wait, you can sub by using a can of black beans and add onions, garlic and any other spices you want.

Next, make the bulgar. To do this, in a medium pot, boil 2 cups water. Remove from heat and add the 1 cup bulgar, cumin, salt, chipotle powder and onion powder. Stir to combine, then cover and let sit for 20 minutes. Drain any excess liquid and fluff with a fork. Add lime juice and stir.

Next you’ll be assembling the bowls. In a bowl, add a large scoop or two of the bulgar, black beans, as well as a couple tablespoons of salsa, a sprinkle of lime juice and some diced cilantro. Add some cherry tomatoes, fresh sweet corn, and avocado.

You can also add additional toppings, such as vegan sour cream and crushed tortilla chips. So many options and all so good.

Ingredients

Bulgar:

  • 2 cups water
  • 1 cup dried bulgar
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon chipotle powder
  • 1/2 teaspoon onion powder

Black Beans:

Toppings: 

  • 1/2 cup favorite salsa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • 1 can sweet corn, rinsed and drained OR 2 fresh sweet corn from the cob (preferred)
  • 1 avocado, chopped into small pieces
  • 1 lime, cut into 4 wedges

Additional Toppings:

  • vegan sour cream
  • tortilla chips
