This simple Lemon Chickpeas side dish is filled with flavorful hints of lemon and tarragon, making this a wonderful addition to any dinner party, or just a regular night at home. It's also only 9 ingredients, 20 minutes to make, and uses only one pan!
1medium shallot - chopped very fine (about 1/4 cup)
1/4teaspoonground sea salt
1/8teaspoonfreshly ground black pepper
2cans - 16 ounce garbanzo beans (chickpeas), rinsed and drained
2tablespoonschopped fresh tarragon
1/4cuptoasted pine nuts
1 1/2tablespoonsfresh lemon juice
Instructions
In a medium skillet, add olive oil over medium heat. Add the minced garlic and cook for 1 minute. Add shallots and cook for 2-3 minutes, until shallots are soft. Add the sea salt, black pepper and chickpeas. Heat for 5 minutes or until warm, stirring occasionally.
Remove from heat and stir in tarragon, pine nuts and lemon juice. Serve warm.
