These Apple Cinnamon Breakfast Squares are subtly sweet and delicious, but without all the guilt. They are a great breakfast, or even as a dessert (topped with ice cream of course). =)
1large - or 2 small granny smith apple(s), seeded, peeled, cored, and diced into small pieces
Instructions
Preheat oven to 350 degrees. Spray an 8-inch baking dish with coconut oil (or cooking spray).
In a small bowl or mug, mix together 1 tablespoon chia seeds with 4 tablespoons water. Set aside until thickened (4-5 min).
In a large bowl, add brown sugar, coconut oil, vegan butter, maple syrup, vanilla, and chia egg. Add the flour, baking soda, oats, sea salt, cinnamon, and cloves. Stir until combined. Add the apple and stir until blended.
Spoon the mixture into an 8 inch pan and spread evenly. Bake uncovered at 350 degrees for 35-40 minutes.
It is best to let cool and then refrigerate for an hour before cutting and serving. Makes 15 squares.
