Easy Pear Crisp (Vegan, Gluten Free)

This Easy Pear Crisp is so simple to make (with only 10 minutes of actual prep time!). Top with ice cream and homemade vegan caramel sauce for a truly divine "less-guilt" dessert.

Ingredients

  • 4 medium pears - peeled and thinly sliced (Bosc, Anjou or Bartlett pears are recommended)
  • 1/4 cup coconut sugar
  • 2 tablespoons - vegan butter, melted
  • 1/2 teaspoon ground cinnamon - divided
  • 1 cup gluten-free old fashioned oats
  • 1/4 cup unsweetened coconut flakes
  • 1/2 cup gluten-free all-purpose baking flour
  • 1/2 cup chopped pecans
  • 1/3 cup coconut oil - melted
  • 1/4 cup maple syrup
  • Vegan Caramel Sauce - optional
  • vegan vanilla ice cream

Instructions

  • Preheat oven to 375 F. Grease a 9x13 baking dish (or similar size) using vegan butter, coconut oil, or baking spray. 
  • In a medium bowl, add the pear slices, vegan butter, coconut sugar and 1/4 teaspoon cinnamon. Mix together and transfer to the baking dish.
  • In the same medium bowl (no need to wash!), add the oats, coconut flakes, flour, pecans, coconut oil, maple syrup and remaining 1/4 teaspoon cinnamon. Stir with a spoon and then transfer the mixture onto the pears in an even layer. Press down with the back of the spoon to flatten.
  • Bake uncovered for 35 minutes at 375 F, or until browned and bubbling. If making the Vegan Caramel, you can do that while the pear crisp is baking. Remove from oven and set aside to cool. Store this Pear Crisp in an airtight container in the fridge for 3-4 days (but best served immediately). 

Notes

  • Nutrition info does not include ice cream or Vegan Caramel.
  • Please be aware that all ovens cook a little differently, so yours may take a little less or more time to bake. Remove from oven when starting to brown and bubble. 
  • The Vegan Caramel is a great addition, but if you're trying to save on calories, the pear crisp is perfectly flavorful without. However, the vanilla ice cream is non-negotiable (in my opinion). =)
  • For the vanilla ice cream, you can most likely find a variety of different dairy-free options at your local supermarket. My favorite brands are Ben & Jerry's, So Delicious and Coconut Bliss.
  • You can also add a bit of ground or minced ginger, or ground nutmeg, to spice up the flavor. Or if you have 'apple pie spice' on hand, that could also be a great addition.
  • Feel free to swap out apples for the pears in this recipe OR use a mix of pears and apples if you have them on hand.
  • I would definitely recommend fresh pears for this recipe. Canned should work and taste ok, but will be very mushy. Fresh is best.
