Spicy Baked Potato with Broccoli & Vegan Queso (Vegan, Gluten Free)

Spicy Baked Potato with Broccolini and Vegan Queso- a nutritious and simple lunch or dinner.


  • 2 medium baked russet potatoes
  • 8 ounces broccolini
  • 4 Vegan Queso
  • jalapeño hot sauce


  • Cook potatoes as desired (microwaving, oven, boiling, Instant Pot, etc.)
  • Steam the broccoli until just starting to get soft.
  • Prepare the Vegan Queso cheese.
  • To prepare, cut a slit down the potato lengthwise and break away the potato skin to expose the flesh. Press with a fork. Add the broccoli and drizzle the vegan queso on top. Lastly top with desired amount of jalapeño hot sauce (and Spanish paprika as seen in photo).


Nutrition information includes 2 tablespoons Vegan Queso per serving.
