Ingredients

  • 1 cup cooked brown rice
  • 1 1/2 teaspoons olive oil - divided
  • 1 link - about 3 ounces vegan sausage link, cut into bite-size thin pieces
  • 1/2 cup finely diced sweet onions
  • 2 garlic cloves - minced
  • 1 1/2 cups kale - chopped and white parts removed
  • 1/8 teaspoon ground sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper - or to taste

Instructions

  • In a medium bowl, add warm cooked brown rice.
  • In a large skillet, heat 1 teaspoon olive oil over medium heat and spread around the pan. Add sausage and cook for 3-4 minutes on each side, turning once, until browned. Add the onions and garlic and cook for 2-3 more minutes, stirring occasionally.
  • Remove from heat and add the onion/sausage mix to the rice.
  • In the same skillet over medium heat, add the chopped kale and 1/2 teaspoon olive oil. Stir and cook for 2 minutes, or until kale starts to wilt. Remove from heat and add the kale to the brown rice mixture. Then add all seasonings and stir until combined. Makes about 2 cups, or 1 large serving.
