This crunchy Sweet Superfood Salad with Poppyseed Dressing is SUPER healthy and packed with important nutrients.

Ingredients

  • 15-20 small brussel sprouts - stems removed, trimmed and chopped thin
  • 1/2 small head red cabbage - chopped (white parts removed)
  • 1 bunch green kale - chopped (stems removed)
  • 1 cup dried sweet cherries - chopped
  • 1/2 cup roasted unsalted pepitas - small pumpkin seeds[br]

Poppyseed Dressing

  • 2 tablespoons dijon mustard
  • 3 tablespoons Vegenaise - non dairy mayonnaise
  • 2 teaspoons lemon juice
  • 2 teaspoons poppy seeds
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon maple syrup

Instructions

  • In a large bowl, combine brussel sprouts, red cabbage, kale, sweet cherries, and pepitas.
  • To make dressing, combine all dressing ingredients in a small bowl and stir with a small whisk until blended. Drizzle on salad and serve.
