I will never forget the first time I had wasabi. I had just moved to Hawaii (I think I was there maybe a week) when my new Brazilian friend Fran told me “try this green stuff, it’s delicious” in her adorable accent. She handed me what looked like a small little spoonful of green stuff. Since I’m always a fan of new cultural experiences, I tried it.  For about 1.5 milliseconds, it was a great flavor, but then my nose started to burn, and I mean BURN. I was gasping for air, but could still see my my new friends laughing through the tears in my eyes.

After my hazing experience into the Hawaiian culture, this haole (that’s what they call white people- pronounced “how-lee”) learned a valuable lesson. When eating wasabi, you don’t need much! =) So for this caesar salad, I recommend adding just a little. You can always add more if you need a little more spice.

To begin, preheat your oven to 400 degrees.

After cutting up the tofu into 1/2 inch cubes, pat it dry with a few paper towels (being careful not to smush them). Add the tofu to a medium bowl. Add garlic, tamari or soy sauce, panko breadcrumbs, sea salt, pepper, and stir to coat the tofu.

Place the tofu on a  baking sheet and bake at 400 for 25-30 minutes, stirring occasionally until the tofu is brown and firm.

To make the caesar dressing, add the tahini, wasabi, nutritional yeast, dijon mustard, apple cider vinegar, tamari, lemon juice, olive oil, caper juice and water in a food processor or blender. Blend until creamy.

In a large bowl, add the romaine lettuce. Drizzle with the dressing, adding 1/2 cup at a time then stirring until desired taste. Top with croutons and serve immediately. *If not planning to serve immediately, keep dressing separate until ready to serve.
