Every time I see a recipe, the serving size is 2 or 4. But what about those times you’re cooking for only yourself? Ok yes, I guess technically you could just divide it, but what’s the fun in that? (I hate math). My husband works a lot of weekends and I’m constantly finding myself cooking up meals for just me, and this Sausage and Kale Rice Bowl is one of my favorite dishes.
It’s really easy to make- ready in 15 minutes- but still warm and comforting and makes me feel like I put some actual effort into my dinner, instead of eating chips and salsa for dinner (anyone?). I even like to eat this dish cold, and I could also envision it as a breakfast dish with an English muffin on the side. So many options…
How to make this Sausage and Kale Rice Bowl:
So to start, in a medium bowl, add the warm cooked brown rice.
In a large skillet, heat 1 teaspoon olive oil over medium heat and spread around the pan. Now for the sausage- use your favorite vegan or veggie sausage and be sure to cut it thin so it browns easily, which also cuts down on time. Add the sausage to the skillet and cook 3-4 minutes on each side, turning once, until browned.
Then add the onions and garlic to the skillet and cook for 2-3 more minutes, stirring occasionally. Remove the skillet from heat and transfer the onion/sausage mix over the rice.
In the same skillet over medium heat, add the chopped kale and 1/2 teaspoon olive oil. Stir and cook for 2 minutes, or until kale starts to wilt. Remove from heat and add the kale to the brown rice mixture. Then add all seasonings and stir until combined. Makes about 2 cups.

- 1/2 cup finely diced sweet onions

- 1/8 teaspoon ground sea salt
- 1/8 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper - or to taste
