Sorry peeps! I admit I have been MIA from my blog lately. For the past 3 weeks, I’ve been traveling for my day job, shooting video in Toronto, California and Germany. It’s been an absolute blast and I’ve realized how much I truly LOVE to travel. Ok, maybe I don’t love the actual traveling part of it, just the getting there part. As I type, one of my bags is still missing (and it’s already been 4 days)! But all in all, I feel so lucky that I get to experience different cultures and food, and see the world. It’s very good research for my blog too! Does that mean I can I write it off? 😉

Although I love exploring the world, I always feel a little stressed not keeping up with my blog. But luckily, I’m home for 3 weeks before my next trip (Hawaii!) so there’s plenty of time for more recipes! Woohoo! Get ready.

This Quinoa & Asparagus salad is a super healthy salad with an incredibly simple dressing. It’s made with white balsamic vinegar, which could be a dressing all by itself. And if you don’t like arugula, you can substitute with spinach or spring mix; any kind of lettuce will do.

To begin, in a small saucepan, heat the water over medium heat. Add the quinoa (make sure it’s rinsed first) and cover. Reduce heat and cook for 12-15 minutes, or until liquid is absorbed. Remove from heat and let cool.

Next, boil the asparagus in a medium stock pot until crisp-tender, about 4 minutes. Remove from heat, drain, and transfer to a large bowl of ice water. This preserves the bright green color of the asparagus and it only takes a second.

Then, in a large bowl, combine the spring mix, arugula, cherry tomatoes, green onion, basil and asparagus. Add quinoa and stir.

For the dressing, combine all dressing ingredients and stir with a small whisk. Drizzle dressing over salad and serve. Did I mention how much I love white balsamic vinegar?!!

Ingredients

  • 1 cup water
  • 1/2 cup uncooked quinoa, rinsed
  • 1 bunch asparagus, trimmed and diagonally cut into 1 inch pieces (about 2 cups)
  • 2 cups spring mix lettuce
  • 2 cups arugula (or spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped green onions (about 1/2 bunch)
  • 1/2 cup chopped fresh basil

Dressing:

  • 3 tablespoons white balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 cup tangerine (or orange) juice
  • 1 teaspoon agave nectar (or honey)
  • 1/8 teaspoon freshly ground black pepper
