There’s an amazing salad place near my work, and they make the most nutritious and filling salads I’ve ever had. Every salad is chopped to perfection and there are at least 50 different salad dressings to choose from. My most recent lunch there inspired me to make a chopped salad and what’s better than green, green and more green!?

I love that this salad is jam packed with sweet peas, edamame, celery, and broccoli- making this incredibly nutritious and a high-protein salad. And the dressing- well, try it for yourself. Trust me.

Chop, Chop, Chop. To start, prep all the salad ingredients and place in a large bowl. Stir to combine.

Next, make the dressing by combining all the dressing ingredients. Place 1 portion size (about 1 cup) in a bowl and drizzle with the dressing. Serves 6 (1 cup servings). Store the salad and dressing in airtight containers for 1-2 days in the fridge.

Ingredients

Salad:

  • 2 cups chopped sweet green lettuce
  • 1 cup frozen sweet peas, thawed (or fresh)
  • 1 cup shelled edamame
  • 3 stalks celery, chopped
  • 1/2 cup broccoli florets, chopped (about 1 cup chopped broccoli)

Olive Greek Dressing::

  • 1 teaspoon kalamata olive juice
  • 10 kalamata olives, chopped very fine (using chopper if possible)
  • 3 tablespoons red wine vinegar
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh dill, chopped
  • 1 teaspoon agave syrup or honey
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Prep all salad ingredients and place in a large bowl. Stir to combine.
  2. To make dressing, combine all ingredients and stir. Place salad in a bowl and drizzle with dressing. Serves 6.
