Key Lime Pico de Gallo

This Key Lime Pico de Gallo is an incredibly easy appetizer with flavors of key lime.

Key lime juice comes from key limes, which are limes smaller in size than traditional (Persian) limes. They also have a stronger, more sour flavor and are juicier. They are commonly used in key lime pies or other desserts, and in cocktails. Whenever I make key lime pie, I have key lime juice left over, so it’s great to find a recipe where I can use it up.

This is super easy too!! In a medium size bowl, combine the jalapeño pepper, white onion, cilantro, lime juice, plum tomatoes, garlic, olive oil, salt and pepper. Stir and refrigerate. Makes about 2 cups.

Ingredients

  • 1 small jalepeno pepper, seeded and chopped fine
  • 1/2 cup chopped white onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon key lime juice (or fresh lime juice)
  • 3 small plum tomatoes, seeded and diced
  • 3 garlic cloves, minced
  • 1 teaspoon extra virgin olive oil
  • 1/8 teaspoon ground sea salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. In a medium size bowl, combine the jalapeño pepper, white onion, cilantro, lime juice, plum tomatoes, garlic, olive oil, salt and pepper. Stir and refrigerate. Makes about 2 cups.
