Fancy Mushroom Bruschetta

This Fancy Mushroom Bruschetta is so fresh and easy! Serve it alongside french bread slices and you’ve got yourself a delicious, unique party appetizer.

To start with this simple but delicious recipe- in a large saucepan, heat oil over medium heat and add garlic and mushrooms. Cook the mushrooms until soft, about 4-5 minutes.

In the same pan, toast the pine nuts over medium heat for a few minutes until brown. Be careful not to burn.

Add the mushroom mix, parsley, arugula and salt to a food processor.  Blend until all ingredients are combined and mushrooms are chopped small.

Add bruschetta to slices of french bread. Top with toasted pine nuts and freshly ground black pepper.

Ingredients

  • 1 tablespoon truffle oil (or extra-virgin olive oil)
  • 3 garlic cloves, minced
  • 8 ounces sliced baby bella mushrooms
  • 1/2 cup pine nuts
  • 1/2 teaspoon ground sea salt
  • 1 cup flat leaf parsley leaves
  • 1 cup arugula leaves
  • freshly ground black pepper

Instructions

  1. In a large saucepan, heat oil over medium heat. Add garlic and mushrooms. Cook mushrooms until soft.
  2. In the same pan, toast the pine nuts over medium heat for a few minutes until brown.
