It’s the beautiful beginning of fall in the midwest and I have to say I love this time of year! Michigan is especially great because of all the apple cider mills, haunted hay rides, and my personal favorite- fall fashion! I adore wearing boots and jackets… something I surely missed when I lived in Hawaii. I also love to see all the new pumpkin and fall recipes popping up everywhere online. And while this recipe isn’t exactly fall-like, sweet potatoes surely give me that warm and fuzzy feeling of cold weather and I thought it was perfectly appropriate for this time of year.

I also love the combination of the avocado toast and the sweet potato fries. I call them ‘home’ fries because first, I made them in my home (clever), but mostly because they are reminiscent of the popular side dish you might see at a classic diner. Or maybe you’ve heard them called American fries (as opposed to the ever-so-popular French Fries), fried potatoes, or house fries. Seriously, why are there so many names for one potato side dish??! Well my recipe should technically be called oven home fries, since they are not fried. They are definitely a lot healthier compared to what you might find in a restaurant, and butter-free. It’s the perfect healthy breakfast or brunch.

Preheat your oven to 425 degrees. In a large bowl, add the diced sweet potatoes. Drizzle with olive oil and stir to coat. In a small bowl, combine the salt, black pepper, cumin and coriander. Sprinkle the spices over the sweet potatoes while stirring until evenly distributed. Layer the sweet potatoes evenly on a baking sheet and bake for 30-35 minutes, flipping the potatoes halfway through baking time using a large spatula.

After baking, the sweet potato fries will be browned nicely. Feel free to bake a few minutes more for crispier fries.

While the sweet potatoes are baking, you can make the avocado toast. In a medium bowl, combine the mayonnaise, avocado, sweet peas, cilantro, lime juice, and red pepper flakes. Mash with a potato masher or large spoon until combined. The peas will still be chunky. Spread the avocado-pea mix onto 2 pieces of toast.

Serve the avocado toast with a side of sweet potatoes and tomato slices.

Ingredients

Sweet Potato American Fries:

  • 2 small sweet potatoes, peeled and diced into bite size pieces
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

Avocado Toast:

  • 2 teaspoons dairy-free mayonnaise (I use Organic Veganaise)
  • 1 small avocado, pitted
  • 1/2 cup sweet peas (frozen and thawed, not canned)
  • 1 tablespoon chopped cilantro
  • 2 teaspoons lime juice
  • 1/4 teaspoon red pepper flakes
  • 2 slices favorite bread, gluten free if desired
  • tomato slices (1 tomato)

Instructions

  2. While the sweet potatoes are baking, you can make the avocado toast. In a medium bowl, combine the mayonnaise, avocado, sweet peas, cilantro, lime juice, and red pepper flakes. Mash with a potato masher or large spoon until combined. The peas will still be in pieces. Spread the avocado-pea mix on 2 pieces of toast.
  3. Serve the avocado toast with a side of sweet potatoes and tomato slices.

The nutrition below shows a pretty high fat content. This is due to the avocado (although it’s a good kind of fat!). To cut down on fat, use a 1/2 an avocado.
